I've never canned that, but can't you just make up some apple pie filling like you were going to make a pie, but MORE, and can it? It's basically just apples, butter, sugar and flour, isn't it? Oh, yeah, and don't forget the cinnamon! What if you put all the ingredients in a saucepan and heated it so the butter melted and the sugar dissolved, then poured it into jars? Does that sound like it might work?
Well, maybe I don't know what I'm talking about, but if I were you, I'd experiment with a couple of jars and see how it turned out.

I know I'm terribly late with this but hopefully it will come in handy this fall.
Companies Coming Apple Pie Filling 5 cps Peeled, cored, and cut up apples 1 cp sugar 2 Tbsp Minute tapioca (I could only get tapioca flour and it worked fine) 1/2 tsp cinnamon 1tsp lemon juice
Combine apples and sugar. Let them stand until juices release. Bring to a boil for 1 minute, stirring constantly. Add tapioca, cinnamon, and lemon juice. Boil another minute. Place mix in sterilized jar (recipe makes 1 qt at a time) and process 20 minutes in a boiling bath.

If I'm ever lucky enough to get a bushel of apples($$$), I'm going to try it. I can't believe how expensive apples have gotten. Thanks Kitaye!

You're welcome. I get a bushel of apples from the orchard every year and put up several jars of this filling. It tastes good. We've used it for pies, tarts, and pork loin marinade.
