Every one seems to make ro-tel cheese dip different.
How do you make yours?

Melt a pound of Velvetta cheese in the crock pot, add 1 pound cooked ground emu and a can of rotel with the peppers, mix it up and let it simmer a little while on low.

I've never made it. Is it similar to queso dip that is on most party buffets? I may have to get some Velevetta, I've already got the corn chips & Rotel.

Basically you melt a pound of Velveeta cheese in a double boiler, then add the rotel. (I add hot sauce to mine) Some people add other stuff to it. But, I always 1/2 it because it is just me and I eat it for about 4 meals. LOL I also use some to put on bake taters.

I just add the hot ro tel maters to a block of velveeter. Of course I use a double boiler to melt the cheese first.

You guys, I am sure it's just my slow-thinking mode today due to my virus, but I sat here thinking...Ro-tel, Ro-tel, what is Ro-tel...I knew I had heard that name, yet I absolutely could not think what you were referring to until I checked the Ro-tel website just now. I shouldn't even admit that. They have a basic recipe there. Auntie, I know in the midwest, it seems most everyone puts ground beef in theirs, so I seldom get a chance to eat it. I need to make some of this. I am glad you mentioned it to remind me. Deb

Sometime I add sausage or ground chuck, or bacon.
I put different stuff in mine.
I was wondering how other people make it?
A friend of mine puts sour cream in hers
I have heard someone put cream cheese in it.
