Truss a Chicken

It is OK if you do not truss a chicken but it will keep its shape better during roasting

Pass the middle of a long piece of string underneath the ends of the drumsticks and cross the ends of the string to make an X
Pull the ends of the string down toward the tail.
Pull the ends of the string back along the body toward the bird’s back, catching the wings underneath the string.
Pull the string beneath the backbone at the neck opening. Tie the two ends of the string in a firm knot.


I didn’t know how to truss a chicken until about 2 years ago. I bought a toaster oven with a roaster inside. My mother showed me how to do this and I wrote the instructions as she did them. Maybe these directions will be helpful to someone else.

I'm sure this is equally helpful when trussing a misbehaving hubby... They take up less room when storing them in the closet or under the bed.

Yes, but if you do this you need to also use duct tape, otherwise they will keep you awake all night.
