POTATO SOUP
6-7 potatos, peeled and cubed 1 small chopped onion or onion flakes(optional) 8 ounces of cream cheese 1/2 stick of butter 1 tsp garlic salt 1 can of Cream of Mushroom Soup 1 can of Cream of Celery Soup 1 1/2 cups of milk. Toppings of your choice.
Cover the potatos and onions with water and cook until tender. (Don't drain)
When tender, add 8 ounces of cream cheese, cubed. Stir until creamy. Add 1/2 stick of butter, 1 tsp garlic salt, 1 can of Cream of Mushroom soup, 1 can of Cream of Celery soup and 11/2 cups of milk. Cook a little longer.
You may serve it with shredded cheese, bacon bits, etc. on top.
I was looking for a good potato soup recipe and found this one. It is really really good!

Thanks Starfire, I never made potato soup with cream cheese before. I'll have to try it but not till it cools off. Can you believe it-the temp today is already 91 degrees and it's not even 11:30am! Don't you love the change of seasons-when all 4 happen within a week??

I kind of questian the cream cheese also. But I like cream cheese. I had everything but the soups so I thought I would try it.
I was looking for Raferties (?) potato soup or close to it. I kept coming up with this one. It is a keeper for me.

Yum, Rafferties! ;D I love their soups and omg; I really love those croissant rolls they serve with the salad! <drool> I love cream cheese and even put it in my special mashed potatoes! Gives them a little different flavor that is a nice change. It's supposed to be only 62 for the high on Thurs so I think soup will be on the menu!

I chuck cream cheese in all kinds of things - mashed potatoes, cream sauce, anything I can get away with. It gives the dish great consistancy and flavour.
It's supposed to cool off a little this weekend; perfect for potato soup!

Star I hope you do not mind. Sounds like an excellent soup but not good for the non dairy folks. Would like to share this recipe. Leek and potato soup ~ Non Dairy3 leeks, , minced 1 onion, minced 2 tablespoons margarine 4 potatoes, peeled, sliced - thin 4 cups chicken broth/stock 1 1/2 cups non-dairy creamer (silk, oat drink and the like) 1/4 teaspoon mace Salt and pepper to taste Chives Start by sauteing the minced leeks and onion in the margarine. Add the stock/broth and the sliced potatoes and bring to a boil and then simmer for 20 minutes (all vegetables should be tender). Put the vegetables/broth mixture though a blender or food processor and then put back in pot. Add the remaining ingredients and heat thoroughly while stirring, but do not bring to a boil. Serve either hot or cold.
