Is it possible to preserve fresh cilantro by some other means than drying it? I bought some cilantro plants for the garden and if they produce more than I use fresh, I'm wondering what to do with it.

I wash it, let it dry completely(pat it dry or air dry) and then freeze it. It's wilted when it thaws but since I use it in cooking it's not a problem. I think the frozen tastes better than the dried stuff.

Thanks! I'll keep that in mind if 'n when anything comes of these plants. If this summer's as dry as the last I won't have to worry about a surplus of anything from the garden. I ran the tiller (Shh! Our secret, OK?) across the garden today, but it's STILL a bit wet to work very well. If I can beat the rain tomorrow maybe I can get the tomato and pepper plants in.

I actually do the opposite of that. I chop all the leaves up and put them in an ice-cube tray and fill with water. I then toss the entire cube into my beans.
