[shad ow=red,left,300][/shadow]Im wanting to know what or how i can use eggs with a microwave. Its geting to hot to fry them on the wood stove, and was hopeing there was a way of using them with the micro. Thanks

You can scramble them and cook them on about medium power or 50% depending on your microwave. For 3 eggs I cook for about 2 1/2 min on 50 % power. Sometimes I add cubes of ham or green onions & green peppers and scramble like a mixed up omelet-when it's done I put cheese over the top. ***One thing I like to do is use a glass/pyrex type bowl and eith er butter or spray it with cooking release like Pam before pouring the eggs into cook. Otherwise those little buggers really stick to the sides. I also poach eggs in the microwave but you'll have to practice so you don't blow them up. I blew up quite a few practicing-the dog loved them. To Poach: Heat the water in a qt size bowl, add salt if you like. When th water is good and hot & bubbly add the eggs and cook on 50-60% power. Start with a couple eggs and try it. I found to get the whites done but the yolks still runny it takes about 2 mins. My microwave is 1100 watts so if yours is less powerful, you'll have to adjust the times. I also make quiche. let me know if you'd like the recipe.

Thanks Kathy I didn't know that. I have always been told you couldn't put eggs in the micro so I never tried it.

This is a great recipe for using those extra eggs.
Egg Custard
Put this in the microwave as you sit down to dinner and you will have a wonderful warm custard for dessert.
1 1/4 cups milk 2 tsps vanilla extract 4 large eggs 1/3 cup granulated sugar 1/8 tsp salt 2 TBSP packed light brown sugar
1. Put milk and vanilla into 4-cup microwave-safe measure. Microwave uncovered on high 2 to 3 minutes till hot. 2. Meanwhile, beat eggs, granulated sugar and salt in medium-size bowl until blended. 3. Gradually whisk in hot milk until blended. 4. Pour into four 5-6 ounce custard cups. Place cups on a 10-inch round microwave-safe plate. Place plate on mico-wave safe trivet or inverved saucer in microwave oven. 5. Microwave uncovered on medium 6 to 8 minutes, rotating each cup and then the dish 1/2 turn once, until custard is almost set (the centers should jiggle a little). 6. Let stand about 5 minutes until center is firm and sprinkle with the brown sugar.
