We are very picky about the tarter sauce we like, and when I found a gallon of the good kind, I bought it. Now I don't know how long I can keep it in the fridge? Do you think it is like mayonaise and will keep for a few months?
(I don't know what was in my head when I bought the gallon jug, when they did have smaller containers, lol)

Good question. I make mine homemade and just make enough for a meal so I'm no help with this.

I've had store bought stuff last for months as long as it is kept cold.

Sorry, I make my own also but I would think it would be like salad dressing & pickle relish-both keep a long time if kept cold. Just make sure to take out a separate dish full when you want tartar sauce-keeps the rest from getting contaminated or warm. So what kind of seafood are you going to use that gallon of sauce with?

Well, you know my kids...they are not using it for the cod or halibut but using it when they make tuna sandwiches instead of mayonaise. Even with that, I doubt if we will ever finish the gallon before it has to be thrown away...I have no idea what I was thinking when I bought it!

Kids! I wondered if you could take a small container and freeze it. Maybe it would freeze just fine since the commercial type has more preservatives and binders than just salad dressing & pickle relish. The worst that could happen is in a week or so, when you thaw it; you waste 6-8 oz of tartar sauce. I've frozen ketchup when I bought those gallon restaurant cans & that worked out ok. It might be worth a shot.
