Since I've been travelling so much lately, I've been trying to make a pan or batch of something before I leave - something that DH can eat on for a couple of days.
So far, I've done beans, chili and lasagna. Now I'm out of ideas.
Any suggestions?

You can make him some sausage biscuits and wrap them individually and put them in the freezer... take out, nuke for a couple of minutes, and they are pretty good for breakfast!
Burritoes are pretty good too! I also used to make pizza pockets...which amount to pie dough cut into a circle made with a large glass...fill with mozzarella and pizza sauce and pepperoni or whatever...then put another circle of dough on top and seal around edges with a fork...bake...and like the breakfast biscuits they freeze very well and can be taken out and nuked one at a time or two or three.....
My guys like individual little banana breads or pumpkin breads....that they can grab and take to work with them.....
Baked spaghetti works too...but since you have a lasagna for him that might be too much Italian.
Does he like Quiche?

Puerco Verde (Pork cubes in Green Tomatillo sauce)

Hey, thanks guys! Great ideas there. The burrito suggestion reminded me that I haven't made breakfast burritos in ages and he had just asked me about that a little while ago. I think it'll either be Swedish meatballs or chicken and dumplings this time but I'm glad for the list - I'll use it for ideas for next time. Thank you so much! /Via

Another good breakfast is croissants filled with sliced ham and cheese, with or without eggs. Wrap individually and freeze. Nuke when needed. I used to take these to work and everyone loved them.
