Oregano Tomatoes
4 large tomatoes 2 oz. butter, softened 1 T. chopped fresh oregano (or 1.5 tsp dried) 1 clove garlic, crushed 2 T. grated Parmesan cheese pinch of salt dash of pepper
Cut tomatoes in half horizontally and place cut side up in a shallow baking dish. Beat remaining ingredients together in a small bowl. Spread the mixture over the cut side of each tomato.
Broil tomatoes under medium heat for about 5 minutes, or until the topping is just beginning to brown.
*** I've made these also with basil instead of oregano and they're just as delicious. You can really use any herb you like, it doesn't matter. ;D

Tomatoes and herbs go so good together! What a nice side dish for a summer meal when the tomatoes are plentiful. Thanks Lannie!

I bet that is terrific, Kathy, and easy. That's what I like best. I need to start a computer file for all these wonderful recipes everyone has been sharing so I am set for next gardening season. Thank you, Deb
