INGREDIENTS: 1 1/2 cups rice 1 6-ounce jar marinated artichoke hearts 3/4 pound turkey breast 1/2 cup canned black olives Crumbled feta cheese 1. Cook the rice in 3 cups water. Drain the artichoke hearts, reserving 2 tablespoons of marinade. Quarter the artichoke hearts and slice the turkey breast and black olives. Heat 1 tablespoon of reserved marinade in a large non-stick skillet. Cut the turkey breast in strips and cook the strips 3 to 5 minutes until browned. Stir in the drained rice, the artichoke hearts, the olives and remaining tablespoon of marinade and cook 2 to 3 minutes more until combined. Top with crumbled feta cheese.

Guess what I'm having for dinner!! The only thing is I am going to have to substitute chicken breast for the turkey but otherwise I have everthing here!!
