Chicken Pot Pie
Kathy asked me to post this a while back, but because I'm such a slacker and doped outta my mind I forgot.
Well I made it again this wekend and remembered, so here it is, Blades Chicken Pot Pie.
Crust:
6 cups All Purpose Flour
2 tsp salt
2 cups shortening
2 large eggs
2 Tblspn white vinegar
2 tsp Black pepper
Now you can make this all at once, or in two batches, which ever suits you best. If making two batches divide ingredients in half per batch. (3 cups of flour for example)
Mix Flour , salt and pepper in large mixing bowl. Add shortening, and cut shortening in with pastry cutter, fork or two knives. (get the cutter if you can. Its a lot of work otherwise) When Shortening is bleded in to the point where the flour has a crumbly texture, mix egg, vinegar, ice waterin a seperate bowl. Drizzle egg mix over flour, mixing in as you pour.
Mix until dough ball forms, and all dry ingredients are damp and sticky. If the dough is still too dry, add water by the table spoon until it has a sticky but not soggy consistancy. Flatten dough ball into a pancake shape and wrap in plastic wrap, refridgerate for 30 mins.
Filling:
2-3 large boneless chicken breasts, about 1 lb total, cooked and cubed.
32 oz bag of mixed vegetables.
1 10.5 oz can of cream of chicken soup.
1 10.5 oz can of cream of celery soup.
6-12 oz of sour cream
4-5 medium potatoes, peeled and cubed
Salt and pepper to taste. (We use everglades seasoning)
1 soup can of milk.
In another large bowl, mix veggies with both cans of soup, milk and sour cream. Stir until well mixed. Add Chicken, stir well.
Take one of the dough balls and place it on a lightly floured surface, and roll it out so that it's long and wide enough to cover the bottom of the pan (Your largest glass baking pan) and up the sides. Add filling to pan. Roll out second dough ball and cover pan, pinching edges together to seal. Prick several holes in surface of dough.
Bake at 350 degrees for 2 1/2 hours or until crust is turning a bit brown. Cool and serve.
