Panfish chowder
6 bacon strips cut into one inch pieces
2/3 cup chopped onion
1/2 cup chopped celery
3 med potatoes, peeled and cubed
2 cups water
1/2 cup chopped carrots
2 tbls fresh parsley
1 tbls lemon juice
1/2 tsp dill
1/4 tsp garlic salt
1/8 tsp pepper
1 # panfish fillets (perch, sunfish, crappie, ect) cut into one inch cubes
1 cup half and half cream
in a 3 quart saucepan cook the bacon until crisp. remove bacon and set
aside. discard all but 2 tbls drippings. saute onion and celery in
drippings until tender. add the next eight ingrediants.
simmer until veggies are tender, about 30 mins. add fish and bacon, simmer
10 mins or just until fish starts to flake. add cream and heat through.

catfish cakes
1 1/2#s catfish fillets
2 eggs beaten
1 large potato, peeled, cooked, and mashed
1 large onion finely chopped
1 1/4 tbls fresh parsley
4 drops tabasco sauce
1 garlic clove minced
1 tsp salt
1/2 tsp pepper
1/2 tsp dried basil
2 cups finely crushed butter flavored crackers
vegetable oil
poach or bake catfish fillets. drain and refrigerate. flake cooled fish
into a large mixing bowl. add eggs, potato, onion, parsley, tabasco,garlic,
salt, pepper, and basil. mix well. shape into eight patties. coat with
crushed crackers.
heat a small amount of oil in a large skillet. cook patties until browned
on both sides and heated through.

cajun catfish with fruit salsa
6 catfish fillets
3 tbls butter
2 tbls cajun seasoning
salsa
2 med naval oranges peeled sectioned and diced
1 cup diced cantalope
1/2 cup diced honeydew
2 tbls lime juice
brush both sides of fillets with butter sprinkle with cajun seasoning.
place on a broiler pan and broil 8-10 mins or until fish flakes easily
with a fork
for salsa in a small bowl combine fruit and lime juice. serve over fish.
