The sauerkraut thread got me thinking about another regional favorite, Cincinnati Chili. It is a variation on chili-mac. Basically, a plate of thin spaghetti, topped with chili and a huge mound of fine grated cheddar cheese. The chili is made without onions, peppers or beans. I do not have a chili recipe because these are closely guarded secrets. Anyway make your favorite chili, sans beans and peppers. Spoon it over the spaghetti, NOW top with fine chopped raw onion and your fav beans (hot). Cover the whole lot with an inch or two of cheddar cheese and serve with oyster crackers. This culinary delight is usually accompanied by a couple of chili cheese coneys: hot dog, bun, a slap of mustard, splash of chili, sprinkle of raw onion and a mound of cheddar cheese. Enjoy! In Cincy there are chili parlors everywhere, and all the mom and pop restaurants have a version as well. I grew up in Dayton Ohio, 50 miles N of Cincy and never heard of it until I moved there. That looks GOOD! I can almost feel my arteries getting sludged up just looking at the pic. I didn't know Cincinnati is the chili capitol of the world. I think the St. Louis 'thing' is toasted ravioli.
Add a couple of cold frosty ones to that Cincinnati Chili and you'd have a fine meal!

When we are in Cinti we always get the chili (Five way of course). Then we make a stop at the Blue Ash Cafe and get their delish huge sandwiches. Mmmmm
