6-8 potatoes, cubed 1 tablespoon chives, chopped 1 ½ cup celery, chopped ½ cup parsley, chopped ½ cup onion, chopped ¼ teaspoon paprika ¼ teaspoon celery seed Salt and pepper to taste 2 tablespoons butter 2 tablespoon all-purpose flour 1 cup milk 2 ½ cups grated sharp cheddar cheese Chives, sour cream, and bacon bits, as garnish
Place potatoes, chives, celery, parsley, onion, paprika, celery seed, salt and pepper in slow cooker. Mix gently and add water just to cover. Cover and cook on high for 1 hour; reduce heat to low and cook 4-5 hours or until potatoes are done. In a medium saucepan over medium-low heat melt butter, stir in flour. Do not allow mixture to brown. Stir in milk; cook, stirring constantly, until mixture thickens. Add cheese and continue stirring until cheese is melted. Turn slow-cooker to high; slowly add cheese mixture to cooked potato mixture. Continue cooking until soup thickens to taste. Makes 6-8 servings.
I also add ham to this.
