2 cans hominy, (15 ounce) drained 1 can green chilies (4 ounce) chopped and drained ½ cup chopped onion 1 carton sour cream (8 ounces) 1 and 1 ½ Cups sharp Cheddar cheese 6 to 8 strips of bacon, crumbled
Preheat oven to 350 degrees. Combine all ingredients except cheese into a medium bowl. Spoon into a lightly greased (or Pam spray) 8 x 8 inch casserole dish. Sprinkle cheese evenly over the top. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes or until golden and bubbly.
This is so simple and easy to make.

We've become quite fond of hominy here so this will be going on the fridge door. Are any of you having a hard time finding hominy? The stores here all carried it until just before Christmas and now nada, nothing, zip. When you ask the clerks they look at your like you have three heads Good thinkg I bought 4 cans last time I bought some.
