I found an awesome soup recipe in one of my vegetarian cookbooks. I was looking for a cream of potato soup but this other one looked so good I tried it. Was very glad I did.
3 cps vegetable broth 1.5 cps peeled diced potatoes(small pieces) .5 cps diced carrot Bay leaf 1 cp thinly sliced leek 1 clove of garlic(I used more and liked it) 2 tbsp sunflower oil
Heat oil in large pan, add garlic and leeks and cook medium high until soft but not browned. Add broth and bay leaf. Bring to a boil and boil for 5 minutes. Add carrots and potatoes. Bring back to a boil and cook on medium low for 15 minutes or potatoes are tender but not soft. Add salt and pepper to taste.

That does sound good especially now that the weather turned cold. I'm going to town tomorrow; I'm going to be picking up some leeks. Thanks for sharing ! ;D
