DH asked me to find this online. It is his favorite Potato Cheese soup recipe.
Title: Marie Callender'S Potato Cheese Soup Yield: 8 Servings
Ingredients
8 c peeled and cubed potatoes 2 c peeled and chopped onions 4 c chopped celery 2 ts salt 4 c half and half 6 tb butter or margarine 1 c shredded sharp Cheddar -cheese 4 tb chopped fresh parsley; -optional garnish
Instructions
Marie Callender's is a chain of restaurants in the southwest (US).
1. Place potatoes, onions, celery and salt in water to cover in a large pot. Simmer until tender, about 15 minutes.
2. Put in blender or food processor fitted with the metal blade and puree until chunky.
3. Return to soup pot; add half-and-half, butter and cheese. Stirring, simmer until piping hot. (Do not boil.)
Presentation: Garnish with parsley if desired. Good served with corn bread.
Serve 1.5-cups per person (approx). 352 cals, 27g fat (68% cff)

I've never made a 'fancy' potato soup but this one sounds really good. I think that might be a good way to use up those russet potatoes I have in the pantry. It's going to be cool this weekend; good soup weather. Thanks Momo!

Ooooh, I love potato soup especially in winter. Add cream and cheese and I'd be in heaven. I'll have to try this one with some of my homemade cheddar (so it'll still be white). It sounds like it might be my other favorite soup! I just wish I wasn't out of potatoes right now so I could try it right away!
