Summer Squash Bake
INGREDIENTS:
*3 large yellow summer squash or zucchini (peeled & seeded if mature), sliced into 1/2 inch thick rounds *1/2 medium onion, cut into 1/2-inch slices *2 tablespoons butter *4 slices Swiss cheese or 1 cup Shredded Swiss salt and pepper to taste
DIRECTIONS: *Preheat oven to 350 degrees F (175 degrees C). *Lightly grease a 2 quart casserole dish. *Layer the squash and onions in the casserole dish. Salt and pepper to taste with each layer. *Dot with butter, and top with Swiss cheese slices or shreds. *Cover, and bake 25 minutes in the preheated oven. *Remove cover, and continue baking 15 minutes, or until squash is tender.
Serves 4, easily doubled
