Tabbouleh (tabouli)
Ingredients 1 cup medium-grade bulgar 1 cucumber fine diced 3 medium, firm chopped tomatoes 4 chopped scallions 3 cups finely chopped parsley 1/2 finely chopped mint 1/2 cup olive oil Salt, pepper and lemon to taste
Directions Rinse bulgar, place in medium bowl with water and let soak for 20-30 min. Drain and fluff. Combine tomatoes, cucumber, scallions, parsley & mint in large bowl. Add bulgar and toss. Wisk together olive oil, lemon juice and salt and pepper into a small bowl. Mix together all ingredients and serve cool inside a Pita Pocket.
