Colorful Emu Sausage Strata
Stratas are great ‘company dishes’ because they can be prepared the night before.
¾ pound emu bulk sausage 1 teaspoon oil 2 medium to large onions, peeled and chopped ¾ cup julienned green bell pepper ¾ cup julienned red sweet bell pepper 1 pound loaf bread, cut into cubes 1 cup shredded Monterey Jack cheese 1 ½ cups scrambled emu egg or 6 chicken eggs 2 cups milk Salt Pepper
Crumble and lightly brown sausage in oil over medium heat, remove and set aside. Sauté onions and peppers.
Place half of the bred cubes in a greased13 x 9 x 2 inch baking dish. Sprinkle with half of the onion mixture, emu sausage and cheese. Repeat layers.
In a bowl, lightly whisk the eggs, milk and seasonings until combined. Pour egg mixture over top of bread mixture. Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before placing in oven. Preheat oven to 350° F. Bake, uncovered, for 45 to 50 minutes or until eggs are set and bread is golden brown. A knife inserted near middle should come out clean. Serves 8.
