10 ounces small Brussels sprouts 1 slice turkey bacon, chopped 1/3 cup sliced green onions (white part only) 1/3 cup diced celery 1/3 cup diced or shredded crrots 1 tbsp. water (optional)
Cut the ends off Brussels sprouts and remove any outer eaves that are damaged or yellow. Put in medium saucepan. Add cold water to cover, bring to a boil over med-high heat. cook uncovered for 15 minutes or until you can easily prick with point of a sharp knife. Transfer to colander, rinse under cold water to stop cooking and maintain bright color of sprouts.
In same saucepan, cook bacon over medium low heat for about 8 minutes or until it begins to brown. Add remaining vegetables. Cook, covered for 3 minutes.
Stir in Brussels sprouts. Cook, covered for 10 minutes, or until heated through, stirring occassionally. If the vegetables begin to stick to the pan, add the water.

Thanks. I love Brussel Sprouts and there aren't too many recipes for them.
