Squash casserole!
GREAT stuff!
4 cups of steamed squash(cut up small) 2 tsp. salt 1 cup finely chopped onions 2 cups of grated cheese 4 eggs 1 1/2 sticks of margarine 1 tsp. pepper 2 cups of evaporated milk 4 cups of saltine crackers
Mix all ingredients together and pour into a greased 9 X 13 pan. Cook 40 minutes at 375 degrees. I top with a little bit more cheddar cheese on top!
This recipe came from a friend of mine and it has been a potluck dinner pleaser for years! I use yellow crookneck or zucs either one! You can also use the grated squash that you freeze in the winter when you don't have any fresh.

Thank you. Cheese, Onions, and butter...what's not to love there. I've been looking for something new to try with my squash. this sounds yummy.

It was awesome! Thank you Nan, I don't know if it was the fact it was my own squash or if it was all that butter and cheese but this recipe is now my very favorite way to fix squash. ;D

I have a confession to make..... I fix a big batch of it and have it with dinner once....then keep it in the fridge and warm some up for breakfast every morning till it is gone! It is GREAT with a bit of chunky picante sauce on it for breakfast! Easy too! If you use lowfat cheese and skim evap. milk....it isn't that bad for you! At least I keep telling myself that when I eat it! YUM! Glad you all liked it!
