Zucchini Quiche
3 cups shredded zucchini
1/2 cup grated cheese
1 cup Bisquick
1/2 cup chopped onion
1/2 teaspoon dried oregano
2 teaspoons chopped fresh parsley
1/2 teaspoon seasoned salt
1 clove minced garlic
1/2 cup oil
4 beaten eggs
Bake at 350 degrees 30-40 minutes. This is my favorite one. It is
also good cold.
We had this for supper tonight. It is so good. I usually dice my zucchini fine instead of shredding it, and I added one yellow squash as well for color. I don't like the seeds in any of the squash so I scoop out the centers and the chickens get this part. I also add extra shredded cheese on the top of it. You won't be disappointed with this recipe. I love to see the green and yellow coloring in this when it is done. Great for church dinners, too.
