In either recipe, a Cajun seasoning either mild or spicy can be substituted for the salt & pepper.
Okra Patties
3 pounds okra, chopped fine Do NOT use food processor-hand chop only 1 1/2 cup onions, chopped fine 1 tablespoons salt 3/4 teaspoon pepper 1 1/2 cups water 3 eggs 1 1/2 cups flour 1 tablespoons baking powder 1 1/2 cups cornmeal bacon grease or oil (for frying)
Combine okra, onion, salt, pepper, water, and egg and mix well. Mix flour, baking powder, and cornmeal and add to okra mixture, mixing well. Heat oil to medium-high, drop okra by heaping tablespoons into hot oil and cook until brown on both sides.
OKRA PATTIES, version II
2 1/4 c. cut okra 1 beaten egg 1 tsp. salt 1/3 c. flour Black pepper Cut okra in 1/4 inch rounds or chop. Do NOT use a food processor Place in double boiler with 1/2 teaspoon salt and steam until about half tender. Beat egg. Add 1/2 teaspoon salt, pepper, and flour; blend well. Add the steamed okra. Mix well and shape into small patties. Brown on both sides in shallow fat.

Copied and printed! Both sound good, but I'll probably favor the one that doesn't call for steaming (laziness). Thanks Kathy!

They both sound good, although I will probably try the second version since it seems like it would yield a bit less. DH is not a fan of okra in any form or fashion so I will be the one eating whatever gets made.

Via, here's the first recipe halved. You could reduce it by half again. Also, any extra patties, drain well on absorbent material such as paper toweling, then lay on a cookie sheet and freeze. Once they're frozen, bag up in serving size portions and freeze. To reheat sautee in a bit of olive oil or butter. I don't brown the ones for the freezer as much so the reheating doesn't burn them.
Smaller batch Okra Patty:

Oh! Thank you! I'm usually okay with dividing simple stuff but get confused once I have to start guessing at how much half an egg would be... That's a great idea for freezing the extras. I hate hate hate to waste food so this would work well for me. /Via
