Hurry-Up Potato Salad www.bettycrocker.com8 cups frozen diced hash brown potatoes with onions and peppers (you can get this were you buy the frozen fries and stuff or the breakfast area) 1 cup shredded carrot 1 cup sour cream 1/2 cup mayonnaise or salad dressing 1 teaspoon curry powder, if desired 1/2 teaspoon salt 1/2 teaspoon ground mustard 1. Heat 1 inch water (salted if desired) to boiling in 4-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Simmer 6 to 8 minutes or until potatoes are tender; drain. 2. Mix remaining ingredients in large glass or plastic bowl. Fold in potatoes. Cover and refrigerate at least 1 hour. When I made this, I also added eggs to the recipe. It was good when consumed that day, excellent when it sits over night in the fridge. It was fast, easy and cheap. MMMMM I also didn't use ground mustard since I didn't have it at the time and it was fine. My in laws loved it.

Good recipe! My best friend had a potato salad craving once. She hurriedly made instant mashed potatoes and added eggs, mayo etc. It didn't taste too good to me, but it satisfied her craving. I just couldn't get past the instant mashed potato part!
