Boiled Apple Dumplings
2 cups self-rising flour 1/4 cup white sugar 1/2 cup apple juice 1/2 teaspoon ground cinnamon 1 cup diced apples 2 (46 fluid ounce) cans apple juice 1/2 cup white sugar 1 tablespoon cornstarch
In a medium bowl, combine flour, sugar & cinnamon. Add the 1/2 cup apple juice , stirring until smooth. Stir in diced apple.
Pour all the apple juice into a 4-quart pot with a tight fitting lid. Add sugar. Bring to a boil over medium heat.
Drop diced apple mixture by soup-spoonsful into boiling juice. Cover and let boil 20 minutes. **Do not remove lid during cooking.**
After 20 minutes, remove dumplings from pan; set aside.
Stir cornstarch into remaining apple juice in pot and cook until thickened.
Serve over dumplings.
Makes 8 dumplings.

Oh That sounds good. And it doesn't have cow dairy in it!!

Pretty much fat and dairy free!! If someone was diabetic, I think you could substitute Splenda for the sugar too!

Pretty much fat and dairy free!! If someone was diabetic, I think you could substitute Splenda for the sugar too! great recipe but the flour and the apple juice will still tickle the glucose button. My boy has been diabetic since 4 right at 11 years. if its diabetic capable I have tried it all lol

TB, when you get a chance, could you post some diabetic friendly recipes?
I'm sure I'm not the only one learning to cook diabetic; Tom was just diagnosed with adult onset a few months ago.

I think this is how my mother makes hers for my dad who is a diabetic. (with Splenda)
