Ingredients • 1 (12 fluid ounce) can evaporated milk • 2 eggs, beaten • 1 1/2 teaspoons vanilla extract • 3/4 cup white sugar • 1 gallon snow Directions In a large bowl, combine evaporated milk, eggs, vanilla and sugar until smooth. Gradually stir in snow until mixture reaches desired consistency. Eat at once.

Okay, Nervous Nellie is back with questions about the eggs...
Is it okay to make this without the eggs? Or would I need a substitute, maybe pasteurized eggs?
I have never even heard of such a thing as snow ice cream - I feel so cheated!

I have never had it without the eggs. This is a very old recipe when there wasn't an egg scare like it is today.
You can try to use to make this without the egg, or use a substitute, maybe pasteurized eggs.
let us know how it works out.

Do you know what the eggs are supposed to do? If the weather man is right, we just might get some snow this weekend and then I can test it out! /VM

Via, you can also cook the custard part so your eggs are 'safe'. So take everything but the snow, mix it well(I'd use an elec beater or a whisk) cook it over med/low heat stirring constantly till it starts looking like thin custard-it will coat the back of a spoon when it reaches 160 degrees.. Turn it off, cool and the proceed with the snow addition for some snow custard!! ;D **The eggs add richness, texture and flavor. Since the recipe Starfire posted is basically a version of eggnog-here's some information about making eggnog safely. The same principle applies for this recipe for snow ice cream. If using regular eggs that have not been pasteurized, use a recipe in which you cook the egg mixture to 160 degrees Fahrenheit. At 160 degrees the egg mixture thickens enough to coat a spoon.
