I've tried lots of jello cheesecake recipes, but this one is my favorite. It's so light you can eat a lot of it! lol Today is my oldest son's bday and instead of cake he wants 2 cheesecakes.
1 pkg lemon lime jello 1 cup hot water 8 oz cream cheese 1 cup sugar 1 can evaporated milk 1 tsp vanilla
Graham cracker crust for a 9x13 pan
Dissolve jello with water and let cool until it begins to thicken
In a seperate bowl beat cream cheese and sugar until mixed. Add evaporated milk, vanilla until fluffy.
Add jello slowly to mixture and beat for 1 minute. Pour into graham cracker crust and put in refridgerator. Takes about 2 hours to set.
(I use different flavors of jello, but lemon lime is our favorite with a close runner up of Strawberry/banana jello)
