3/4 lb. jalapenos 6 c. sugar 2 c. vinegar 6-oz. liquid pectin 1 tsp. margarine 10 drops green food coloring 10-12 (4-oz) jars or 5-6 of the 8-oz jars. Seed peppers. Place in blender with 1 c. vinegar. Blend til smooth. Combine sugar, 1 c. vinegar and pepper mixture in large pot. Bring to rolling boil for 10 minutes. Remove from heat, stir in pectin and 1 tsp. margarine. Return to boil for 1 minute. Remove from heat, add food coloring. Process in hot water bath for 5 minutes.

Pepper jelly is so tasty as a glaze on ham or chicken!! ;D

Whoohoo. I'm planting Jalepenos this year. Kathy you should try pepper jelly on crackers with plain, soft, cream cheese. Deliscious.

I made tons of this stuff when I lived in Alabama..I have to tell you guys there is a HUGE market for selling hot jelly..I couldn't keep up with orders for it..at $3/HALF pint jars.. My youngest son was in college in Philly at the time..he brought some back to school and I was inundated with orders from college kids.. You might want to let folks know that you make this..could be a source of extra $$ for you.. BTW, the first time I cut up jalepeno peppers I didn't know that I should have been using gloves..oh boy..nasty EVIL burning hands..

Where can I buy liquid pectin? I don't have a large selection of stores around - just standard grocery stores, Wal-Mart, Dollar stores, etc.
Friday next will be my trip to the big city with the fancy stores so I can make an extra stop if I need to but I was really hoping to find it around here.

I don't know if they all have it but my WalMart has both the boxes and the liquid pectin in the section where they sell the canning jars, Mrs Wages mixes and the canners. If it's not there, check in the aisle where the Knox gelatin is sold-I found it there off season. Barring those places; try a Krogers store if there's one around. let us know how your hot pepper jelly turns out. I just picked about a peck of mixed hot peppers.

Oh, that's fantastic news! I must have just not noticed it on the shelf before. Wal-Mart had a bunch of canning stuff set out the other day so I'll try there first and then head to Krogers. Thanks! /VM, who can grow hot peppers like a champ but can't grow a bell pepper to save her life

One last tip-don't substitute the powdered pectin-they work totally different in this recipe. I thought maybe you could substitute but I went to the web and checked-both the Ball book and all the sites online say don't substitute. Good thing I checked before giving you bad advise; otherwise you might have a number of jars of jalapeno flavored cool aid.

Found it! It was at Wal-Mart. They had some with the canning stuff (which is where I looked first) and then I noticed a different kind on the shelf with the Jell-O when I was walking by. Thanks for your help! /Via, who never knew they made such a thing

I did it!! I made a batch of this jelly. My first attempt at canning, all the jars sealed, just hope it thickens up. Really hott! I'm going to cut the next batch with half wax peppers for the sissys in the family. lol Beautiful color too.

I didn't see this until now. I was experimenting so I didn't color part of my batch but added green coloring to the other part.
The color doesn't really do anything except to keep it from turning out a strange vomit color. The part I colored green turned out really pretty.
I bet red would be nice! Did you go with that? I wish I had thought of that - I would have made half red and half green.

No, I played it safe and went with green. I added the color before the boil though, I was afraid I messed up, but it came out fine. Set nice too. I got 8 half pints.

Isn't it such a good feeling when everything turns out well? I think I will try the red color for part of it next time - I bet the two colors of jelly would be so pretty on a table. /Via

No doubt, it is Great with a capital G. My sis, who dosen't like peppers tried it and pronounced it "yummy". She did smack me with her wooden spoon when I told her I made my 2nd batch a double, seems double batches of jelly are a no no, who knew? It was a lot slower setting up. By the way, cutting it with half wax peppers had very little effect on the heat.
