Hi All,
Have some nice pumpkins here and I would like to be able to store them in the freezer. What would be the best way to cook them, steam, boil ? Will they freeze well cooked?

Cody & Jess grew pumpkins a few years ago on my farm and had a bumper year. They froze the excess and it was perfect. They either steamed it or baked it; I am leaning towards baked but I can't be 100% positive. I know they didn't boil it since that makes too much liquid in the finished product especially if you're going to freeze it. I know those mid winter pies and soup were great using that frozen homegrown pumpkin.

Yep, you want to bake it. You can season it up in individual containers so they are ready for the pie, or bread, ect.
Make sure you roast the seeds! Yum yum! Funny story, but last year one of the turkeys was pecking at the jack o lantern and somehow got it's head through the whole thing and ran around the yard going crazy! We were laughing so hard, we couldn't even catch it. Finally got it off the turkey, and she looked at us like we were crazy, and we about died from laughing.

Oh Deb, I would give anythign to see a picture of that! I remember my ducks used to like digging around in the carved pumpkins-they'd stick their heads in the eye sockets but they never got stuck!
