Sweet Potato Quick Bread
INGREDIENTS:
1 1/2 cups all-purpose flour, sifted 2 teaspoons baking powder 1/4 teaspoon salt 1/2 teaspoon mace or ginger 1 teaspoon cinnamon 1 cup granulated sugar 2 large eggs, lightly beaten 1/2 cup applesauce 2 tablespoons milk 1 cup cooked and mashed sweet potatoes 1 cup chopped pecans or nuts of choice 1/2 cup chopped dates or raisins
PREPARATION:
Grease bottom of a loaf pan approximately 9- x 5- x 3-inches. Stir together flour, baking powder, salt and spices in mixing bowl. With a large spoon, stir in sugar, eggs, applesauce and milk; stir to moisten all ingredients. Stir in mashed sweet potatoes, pecans and dates or raisins. Pour batter into prepared pan. Bake at 325° for about 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Cool in pan on a rack for 15 minutes. Remove from pan and continue cooling on wire rack.

Can you use a winter squash in place of the sweet potatoes?

I've never tried it kitaye; but I interchange winter squash with sweet potatoes in pie and in a sw. potato casserole recipe; so I'd think it would work. As long as the squash is of a similar consistency & not watery; I'd be adventurous and give it a try! Down here in TN I had to find recipes using sweet potatoes instead of squash. Sweet potatoes are so cheap-5#/$1 and winter squash is 69cents+/#; so now I'm using more sweet potatoes!! Those prices are just the opposite of what I was paying in the northern states!

We bought buttercup squash seeds and hope to have a bunch available for food. The meat is a smilar consistancy to sweet potatoe pie but not as sweet.
