Anyone have a recipe for homemade, "from scratch", bagels? Thanks! No, but that is a good question. I eat a bagel most every morning, preferably whole wheat, but I figure for just myself here, it's probably more time effective just to buy them. One of my best friends all thru college and for years to come was the only person, a man, mind you, with the patience to make homemade bagels. He would basically make a day of it once or twice a month. The bagel making party. What I remember is he would be up at the crack of day to knead and raise his dough. I would usually go over later in the morning as he merged to the boiling of the bagels in the great big soup-type kettles, then they still have to be baked, if I remember right. It's quite an involved process, but they are oh, so tasty. Deb ;D

Bagels
4 to 4 1/2 cups all-purpose flour 2 packages active dry yeast 1 1/2 cups warm water, about 110° 4 tablespoons sugar, separated 1 tablespoon salt 1 gallon water
In mixing bowl, combine 1 1/2 cups of the flour and the yeast. Combine water, 3 tablespoons sugar and the salt; pour over flour mixture. Beat at low speed of electric mixer for 1/2 minute, scraping bowl a few times. Stir in as much flour as you can mix with a spoon.
Turn out onto a lightly floured board and knead in enough flour to make a moderately stiff dough that is smooth and elastic. Cover with a clean towel and let rest 10 minutes.
Cut into 12 equal portions; shape each portion into a smooth ball. Punch a hole in the center of each ball and pull gently to make a 1 1/2 inch hole in the center. Place on a greased baking sheet. Cover and let rise 20 minutes. Broil bagels 5 inches from the heat for 4 minutes, turning once. Tops shouldn't brown.
Preheat oven to 375°
Bring 1 gallon of water with remaining 1 tablespoon of sugar to a boil then reduce heat. Put bagels in water and begin timing when they rise to the top. Cook about 3 to 4 bagels at a time for about 3 minutes, turning once. Drain.
Place on greased baking sheet. Bake at 375° for 25 to 30 minutes. Makes about 1 dozen bagels.

Just be careful cutting it in half - I read somewhere that a lot of people wind up cutting their hands. Set it on the cutting board or plate and cut down, don't hold it in your hand.

AS, the recipe I used is very similar to auntie's except hole-making technique in my recipe is much more exciting: "Place the [dough] circle on a floured surface, put your floured index finger in the hole, and twirl your finger so the dough spins around, making a large doughnut-shaped ring about 4 inches across. as you spin, the hole will become quite large and it will shrink slightly when you stop." (From The Fannie Farmer Baking Book) The exciting part is when you are not so good at dough twirling and you sling a couple off your finger, narrowly missing your DH who is laughing hysterically at you It is a bit of work but they tasted pretty bagel-y and overall, I was pleased with the result. I've also got a WW recipe if you want it (I haven't tried it personally so I can't give a personal recommendation). /VM

AS, now we all want to hear how your first bagels turned out! Please let us know what you thought of your first homemade bagel. ;D I love the cinnamon apple ones and also honey whole wheat.
