I had a bunch (5) of small organic bananas that needed to be made into bread. I love this recipe, it comes from a cook book for kids that I got when my kids were small.
Banana Nut Bread
1/4 cup butter
1/2 cup honey
2 eggs
3 mashed bananas
2 cups whole wheat flour (I use 1 1/2 cup whole wheat flour and 1/2 cup all purpose flour)
1/8 teaspoon salt
1 teaspoon baking soda
3/4 cup chopped nuts (opt.)
3 Tablespoons buttermilk
1) Cream butter and honey together 2) Beat the eggs well 3) mash or chop bananas 4) chop nuts 5) mix all ingredients together 6) Grease one 5x9 pan two 3x7 pans, or 3 soup pans 7)pour batter into the size pan you like, bake at 350*f for 40 - 60 minutes ** 8) Stick a toothpick into the center, if it comes out clean the bread is done. 9) Loosen bread around edges of pan with a knife, remove to wire rack.
** I always have to cook this bread longer than the directions say. Go by the toothpick test rather than the time.
