I love Alton Brown so much. I should check into having a wild, passionate tryst with him.
So, Chili was watching Good Eats tonight (Food Network) and Le Brown was doing a show on barbequed pork. Very informative, as always. He spent a small portion of the show discussing the various smokers, cookers and grills and their relatives merits for the purpose. Eventually he got to the point: ceramic smokers are best but cost a pretty penny. And then he went and assembled one for $47.32. SO COOL.
You'll need: Large terra cotta planting pot (traditional shape) Large terra cotta pot (rounded bowl shape) Couple of bricks or level pieces of wood Hot plate Sturdy pie plate/cake pan Grill, standard size (from any regular round charcoal grill) Thermometer Extension cord
Place the large traditional pot on two or three bricks or level pieces of wood. This allows air circulation through the hole in the bottom. Next, insert hot plate into your pot, threading the cord through the bottom hole. When you're ready you will plug it into the extension cord. On top of the hot plate goes the pie pan. This will hold your chunks of wood. After that is the grill, round like the pot; no need for any support. The meat goes on the grill. Finally, you upturn the round bowl-shaped terra cotta pot over the whole thing as a lid and the thermometer goes in the round hole in what used to be the pot's bottom.
Viola. Ceramic smoker for less than $50, and assembled in less than a minute.

chili, I'm afraid you'll have to arm-wrestle me for a chance at a tryst ;D I love his shows because they are entertaining and informative. I really like the experts he brings on to explain complicated things using styrofoam balls and push-pins You get both the the How and the Why. Didn't he make a smoker for fish a while back using a cardboard box? /VM
