It seems that each and everyone of my summer squash seeds have came up and are doing well. I am going to have an overabundance of the things....all sorts, yellow, patty pans, etc. I need recipes and info on how to store them! Freezing, maybe dehydration?

All of mine came up too-it must be the Year of the Squash. I make squash pickles-I'll post the recipe. I also shred them(use ones without big seeds), drain & package in recipes size quantities. I do that with both yellow summer squash & zucchini, I've never tried it with pattypan since this is the first year they grew. Dried Zuchinni chips are good for snacking and also work good when put in recipes such as marinara sauce-they rehydrate themselves beautifully. I posted a Summer Squash bread/cake recipe down in the breads forum. You could take some of your squash abundance and make up a lot of your holiday breads & freeze them. One less chore at the holidays.

Great idea! I like to do baking....but it is better in the colder months! (Are we ever satisfied with the season we are in? When it is hot, we beg for cooler weather, etc.)
HOw do you nake the dried chips? Any seasonings?

I make the chips by thinly slicing, drying the excess moisture off with toweling and drying them in my Excalibur dehydrator. I make plain ones with no seasonings that I use in recipes like lasagna and marinara sauce. For munching, I've used Zatarains(sp?) Cajun seasoning. I love Cajun foods so once I found I liked these, I quit experimenting. I have never tried it yet but I wondered about using one of the popcorn seasonings such as ranch or cheddar.

I wonder if one could dry pumpkins and make pumpkin chips? Maybe add some spices to make them like pumpkin pie? They raise a lot of fields of commercial pumpkins here and many around the edges of the fields go to waste....I am tired of canning pumpkins! But I love to eat them! I have been gathering up some new recipes for pumpkin soups too....I want to try them all. I bought a book full of recipes off of ebay....pumpkin and squash recipes....but it never arrived here....that has been a couple of months ago....I do not think that they even sent it to me! LOL TH
