One of the guys I work with gave me a recipe for meatloaf that's a bit different, but it's EASY and tastes pretty good:
2 lb. ground beef 1 cup water 1 6oz. package stovetop stuffing mix 2 eggs 1/4 cup barbeque sauce of choice
Mix everything, shape into a loaf or place in loaf pan (I make mine on a punctured foil-covered grill to keep it up out of the grease). Bake 1 hour at 375 degrees. Brush the top of the loaf with additional barbeque sauce for the last 15 minutes of baking. I bake a bit less than the full hour because we like it a bit 'rarer'. I also used closer to 1/3 cup barbeque sauce in the mix, and I added 'sweated' chopped onions. It's very easy to make and the stuffing mix is surprisingly good in it.

That does sound easy, I'll give it a try. Oh, is there any particular flavor of StoveTop I should use-chicken, pork, turkey??

DUH!! I should have said, the recipe calls for chicken. I think for sure turkey would be fine and I think pork would work OK too. I've never had pork flavored dressing. Can't recall ever seeing it in any of the stores around here either. Is it a sort of regional thing?
