Potato GnocchiIngredients:3 cups cold mashed potatoes 1 egg 1/2 teaspoon salt 3 cups flour Directions:Combine all ingredients and mix well with flour to make a manageable dough. The dough may need more or less flour depending upon potatoes & weather conditions. Knead well and roll into lengths. Cut pieces 2/3 inch lengths. With floured fingers, roll between thumb & index finger & press a hollow into each roll. Drop into rapidly boiling water(or chicken broth). Boil about 10 minutes. Drain and serve with tomato or meat sauce. If cooked in broth, an herb/olive oil/parmesan cheese drizzle is very tasty. These may be frozen until ready to use. To do ahead, spread cooked/drained gnocchi on a cookie sheet and freeze. Place frozen Gnocchi in a plastic bag. When ready to use drop frozen gnocchi in boiling, salted water.
