I love sour cream raisin pie but sometimes I don't want to mess with making the pie crust. These are a simple, quick & delicious alternative. SOUR CREAM RAISIN BARS CRUST:3/4 c. oatmeal 1 3/4 c. flour 1 c. brown sugar 3/4 c. butter 1 tsp. soda FILLING:2 c. raisins 1/2 c. water 1 tsp. salt 4 egg yolks 3 tbsp. cornstarch 1 1/2 c. white sugar 1 c. sour cream 1 c. half & half Crust Directions:Mix oatmeal, flour, brown sugar, soda and butter like pie crust. Put 2/3 in bottom of 9 x 13 inch pan. Reserve 1/3 for top of bars. Bake at 350 degrees for 15 minutes. Filling Directions: Boil raisins, water and salt for 5 minutes, drain if still watery. Cook remaining ingredients until thick. Add raisin mixture, put on baked crust. Top with remaining crumb mixture. Bake at 350 degrees for 20 minutes. They freeze well, that's if they're not gobbled up the first day.

This sounds pretty good and it's halfway healthy. Thanks! I missed putting in the butter in the crust. You could used 1/2 Splenda I imagine as well as a lower fat sour cream. I haven't tried making them healthier but I may give it a try now that you mentioned it.

Kathy, that recipe sounds as though it would be a big success.
The reports on Splenda have been such, that we stay away from it now.
Due to the high liquid content, the recipe might work well with just cutting the sugar in half. One could add more raisins or other dried fruit.

Yesterday as I was doing my decorating, I was thinking about these bars. I'm going to try making them with dried cranberries which would be a tasty change from the raisin version. I love 'craisins' especially the ones I got at a health food store that were Not sweetened-they're little flavor bombs of tartness.
