Anyway, I made this one the other night and it was pretty good. I listed a few thing I did or will do differently than the recipe calls for:
Beef and Mushroom Hot Pot
2 lb. stew meat, cut into bite-size pieces
1 lb. mushrooms, sliced
2 cups carrots, sliced
2 14 oz. cans beef broth
1 6 oz. box long grain and wild rice mix (Uncle Ben's)
salt and pepper
1. Season stew meat with salt and pepper and place in a 5-quart slow cooker. Add all remaining ingredients and stir thoroughly.
2. Cover and cook on LOW for 6 to 8 hours.
My variations: I used round steak instead of stew meat. It's cheaper. Something like chuck steak would probably work too, but has more fat. I browned the meat with the salt and pepper before putting it in the cooker. Not really necessary, but I think it gives a better flavor.
Next time I make it I'll mix up the Uncle Ben's flavor packet with the beef broth and cook everything EXCEPT the wild/long grain rice itself until the last hour or so of cooking. Then I'd add the rice mix. I think the rice would have a better texture.
You'll probably want to cut this recipe in half - it makes a LOT. It would be best to use a smaller slow cooker for a half-recipe.

It sounds good and it is easy too. A great combo. I was wondering if it might be a good idea to add the mushrooms when you add the rice to keep them from getting too limp.

I love getting new recipes using the Crock Pot. This sounds good, I'll give it a try in the New Year.
