I don't know if like fruit in your chicken salad but here's what I do to make mine. I don't measure so you'll have to adjust to your own preferences especially the onion amount. Skinned roasted/boiled chicken-cubed.........About 6 cups Dried Onions ........About 1/3 cup orGreen Onions ..........9-10 sliced incl some green Green Pepper .........1 diced Celery (optional) .........2 stalks finely diced Dried Cranberries .........1/2 cup Apple ..........1-2 diced (I peel mine since I can't have apple peels) Salt & Fresh ground Pepper .......... to taste Miracle Whip or Salad Dressing(Not mayo) .........Enough to hold mix together, probably 1cup m/l I mix this the night before to let the flavors meld. I serve it in pitas but it's great in wraps or a half of a small cantaloupe also.

Thanks. This looks goods.
Most of the ones I see have grapes, so I like yours better. A favorite restaurant of mine around here uses cranberries and it is very good. He adds some spice though that I can't figure out.

He adds some spice though that I can't figure out. What color is the spice? I wonder if it's maybe a Creole spice which would be kind of pinkish/red.

It doesntl have any color that you can tell. I know it's not curry or tarragon. The owner won't even give me a clue.
